Last night was quick and easy night at our house. I love fish night...I can whip something up in about 20 min and it's good for you food! We usually try to do fish night at least once per week.

Okay...so last night was Lemon Pepper Grilled Tilapia. I seasoned the fish with some lemon pepper seasoning and a little olive oil. We had a side of grilled zucchini and squash that I marinated briefly in balsamic vinegar and olive oil and some Montreal Steak Seasoning. The fish and the veggies went on the grill at the same time and finished together...in about 12 min. Smiling

Also on the side a I tried out a new side dish from Uncle Bens. It's their 90 min microwave rice but this one had lentils, barley, bell pepper, and carrots in with the rice. It was very hearty and tasted great!

So here's our dinner from last night...fish night!
