Hello everyone!
The year has just started and Its been a while since I have posted a Dinner For Two recipe here in the group. Don't worry, I didn't forget about you guys. 
Yesterday I made this quick and easy meal for dinner, all baked in the oven!
Everything turned out so crispy and full of flavor, I recommend making this for whenever in the mood for comfort food.
The best thing about it is that it all doesn't have much fat, nothing fried, a light, low carb kind of meal. Enjoy!

Ingredients:
2 large potatoes (use as many as you want to eat)
2 tsp olive oil
2 slices white bread
2 white fish fillets, such as haddock, hoki, pollock
1 tbsp plain flour , seasoned
1 egg , beaten
140g frozen peas with mint
2 tbsp low fat plain yogurt
Directions:
Preheat oven to 250° F. Peel and chop the potatoes into thick wedges, then toss with the olive oil and some salt. Arrange on a large non-stick baking sheet and roast for 20 mins, turning halfway.
Lightly toast the bread, then put in a food processor for coarse breadcrumbs. Dust the fish in flour, shaking off the excess, then dip into the egg, then breadcrumbs to coat thoroughly. Roast the fish with the potatoes for a further 20 mins, until both are golden.
Just before the fish and potatoes are ready, boil the peas for 3-4 mins, then drain and mash. Stir in the yogurt and season. You can also add in some carrots, potatoes or both into the mash. Use your cooking instincts!

4this sounds good, but the bf does not like fish unless it comes out of a mrs. pauls fish stick box.

8I'm not normally a fish eater, but your fish looks so good.
9give it a try, you wont be disappointed!
if it just doesn't fly with you, use chicken breasts instead, everything goes together just as great!
10This sounds great I don' tknow if my husband would go for the mashed peas with mint, but I think they sound good.
11like i said, you can add pretty much anything to the mash.
12carrots, sweet potatoes, butternut squash.
The peas and mint along with one of the veggies below will also go great.
